I’ve been making this recipe twice a week, Friday and Saturday, almost every week since the pandemic started. Must have started sometime April 2020 but I can’t be sure. It’s really yummy and has provided a comforting weekend routine I’ve used to stay sane through this whole thing.
Here it is.
- 1 bag of premade dough from Trader Joes
- ½ jar of marinara sauce
- ¼ bag of shredded parmesan cheese
- ¼ bag of shredded mozzarella cheese
- ½ green pepper
- 1/8 yellow onion
- 1 jalapeno pepper
Spread a handful of flour on your countertop. Take the premade dough out of the bag and place it on the flour. Let sit for 30 minutes to warm up to room temp.
Wait 15 minutes after putting the dough on the counter, then preheat the oven to 475.
Cut green pepper into small cubes.
Cut jalapeño into small strips.
Cut onion into strips, then into fourths.
After dough has been sitting for 30 minutes, roll out into rounded rectangle a little smaller than a baking sheet.
Transfer the dough to a baking sheet.
Spread marinara sauce over the dough, leaving a little margin for crust.
Sprinkle parmesan and then mozzarella evenly over the sauce.
Spread vegetables evenly over the cheese.
Place pizza into the oven when the oven is finished preheating.
Cook for 22 minutes.
Remove, cut into eighths and serve immediately.
